Growing up, I’ve always had rice as one of my three meals in a day. And having parents that love to cook, are actually good at it, and are always up for experimenting and trying out new recipes was a cherry on the cake. So naturally, I am a big fan of all things rice. So when Vidhi Doshi a.k.a. @ramenhairedgirl made her lemon rice recipe, I knew I had to get my hands on it and share it with y’all! What You’ll Need
1 tbsp oil
1 tsp mustard seeds
2 tsp cumin seeds
1 dried chilli
1/4 cup peanuts
1 tsp urad dal
1 green chilli
10 curry leaves
Pinch of hing
1 tbsp grated ginger
3 tbsp grated coconut
1/2 tsp turmeric powder
3 cups cooked basmati rice
Salt to taste
2 tbsp lemon juice
Coriander to garnish
Here’s How You Can Put It All Together
Step 1: Heat the oil in a pan, add the mustard and cumin and let them splutter.
Step 2: Now, add the chilli, peanuts and urad dal and sauté it all till lightly golden.
Step 3: Proceed to add the green chilli, curry leaves, hing and grated ginger and sauté for 30 seconds.
Step 4: Add the grated coconut and turmeric to this mix and sauté again for 30 more seconds.

Step 5: Now add the cooked rice and salt and mix it all together on a low flame.
Step 6: Right at the end, add lemon juice (add a little at a time to avoid being too sour) and mix well!
Step 7: And voila! Garnish with coriander and grated coconut!
