We’re back with another delicious recipe and this one’s for all the paneer lovers! If you’re trying to eat healthy in 2021 but also cannot control your taste buds then this cashew and paneer stir fry recipe is the perfect option. Our super-talented gal Vidhi Doshi a.k.a. @ramenhairedgirl sharted with us her recipe of cashew and paneer stir fry that looks absolutely drool-worthy. What You’ll Need
3 tbsp oil
200 gms paneer (cubed)
2 tbsp cornstarch
1 tsp garlic powder
Salt to taste
1 1/2 tsp finely chopped garlic
1 tsp munched ginger
1 lemongrass stalk (halved and bruised)
1 onion (sliced)
1 1/2 cups veggies of your choice—broccoli, carrot and cabbage
20 cashews
1 tsp lemon juice
2 tsp maple syrup
2 tsp dark soy sauce
Spring onion greens
Here’s How You Can Put It All Together
Step 1: Mix the cornstarch, a little salt, and garlic powder together and toss the paneer in it.
Step 2: Now, heat oil in a nonstick pan, add the paneer to it, and pan-fry it on all sides till golden. Drain and keep it aside.
Step 3: In the same pan, add the garlic, ginger, lemongrass, and onion and sauté for about one minute.

Step 4: Add the veggies now, mix well and stir fry on a high flame for 2-3 minutes.
Step 5: Add the cashews now and stir fry for about 3 minutes till they turn lightly golden.
Step 6: Now add the lemon juice, maple syrup, soy sauce, and salt and mix it all well.
Step 7: Add the cooked paneer, toss to heat, and garnish with spring onion green. Serve it with hot rice!
