If you’re a sucker for hummus and pita bread, we’d highly recommend you try out some baba ganoush if you haven’t already. Enjoyed with pita bread, pita chips and various salads, baba ganoush has a very subtle flavour but hits the spot! And what better way to enjoy it than make it yourself? What You’ll Need

2 large eggplants

Oil for brushing

1/3 cup tahini

3 large garlic cloves

1 tbsp olive oil

Salt

1/2 tsp chilli flakes

2-3 tbsp lemon juice

Garnishes

Pomegranate

Zaatar

Olive oil

Pine nuts

Parsley

Here’s How You Can Put It All Together

Step 1: Brush the eggplants with oil and roast them over an open flame till the skin is black, charred and crispy, and the flesh is super soft.

Step 2: Let the eggplants cool down slightly and remove the skin.

Step 3: Discard the stems, make a few cuts and put the eggplant in a colander so that the juices run out, for about 10 mins.

Step 4: Add the eggplants, tahini, garlic cloves, olive oil, salt, chilli flakes, lemon juice (depending on your taste).
If you don’t have tahini, just blend toasted sesame seeds with some olive oil.

Step 5: Blend till smooth (or slightly coarse, you do you boo!)

Step 6: Garnish with pomegranate seeds, zaatar, olive oil, toasted pine nuts and flat-leaf parsley!
