Chef Sabyasachi Gorai loves experimenting with dry fruits and coming up with recipes. And the one thing I cannot give up is sweet treats! So, when Chef Gorai shared his recipe of gluten-free white chocolate and California walnut bites with blackberries, I knew it was going to taste amazing. What You’ll Need
4 eggs
150g sugar
180g melted white chocolate
150g powdered California walnuts
20g raisins
30g California walnuts, halves
100g blueberries
Butter
1 square mould of 22 cm
To Garnish
60g whipped cream
20g California walnuts
20g blueberries
Fresh mint
Here’s How You Can Put It All Together
Step 1: Soak 30g California walnuts halves in cold water and let them hydrate well.
Step 2: Heat the oven to 180°C.
Step 3: Beat the eggs and sugar with an electric mixer until the mixture gets fluffy. Add melted white chocolate and powdered California walnuts, which will be ‘the flour’ of the preparation.
Step 4: In a mould greased with butter, pour the mixture and then add raisins, blueberries, and hydrated California walnuts evenly, so that they don’t burn with the heat of the oven, but remain golden.
Step 5: Bake for 30 minutes, then remove from the oven and let it cool.
Step 6: Unmold, cut into pieces, and serve with a dollop of whipped cream, blueberries, California walnuts, and fresh mint.
