I miss walking into a bakery and being surrounded by the aroma of freshly baked bread! And while I was aimlessly scrolling through my Instagram feed last night, I came across Vidhi Doshi a.k.a. @ramenhairedgirl‘s stories of her baking an Irish soda bread at home. I kid you not, I could smell it through the screen! And being the sweet gal she is, Vidhi shared the recipe with us so you guys too could try making it at home. Also, it doesn’t require any yeast or proof bread! Read on to check out the full recipe.
What You’ll Need
2 1/2 cups all-purpose flour (maida)
1 1/2 cup wheat flour
3/4 tsp baking soda
1/2 tsp baking powder
2 tbsp cold butter
Salt to taste
2 cups thick buttermilk (should be sour)
Extra flour
Here’s How You Can Put It Together
Step 1: Place a large bowl with a sieve on top and add both the flours to it.
Step 2: Also add the baking soda, baking powder and salt to this.
Step 3: Sift the flours into the large bowl. This process not only removes the lumps but also evenly mixes all the ingredients.
Step 4: Add the butter to the dry ingredients and start mixing it with your hands. Break down the butter into small pieces until mixed well.
Step 5: Make a well in the center of the bowl and add the buttermilk in the center. First, add 1 1/2 cup and then the remaining little by little if needed.
Step 6: Slowly start incorporating the flour from the sides to form a dough. This will be a wet-ish dough.
Step 7: Transfer to a clean, floured surface and bring this dough together. Do not knead the dough for more than a few seconds. Just lightly bring it together so it holds its shape. Shape it into a round loaf. Don’t worry, this is supposed to be a rough dough.
Step 8: Preheat the oven at 200° C. Place the dough on a floured baking sheet. With a sharp knife make a cross on top of the bread. Also, sprinkle some more flour on the dough.
Step 8
Step 8
Step 9: Place it in the pre-heated oven for approximately 35 minutes.
Step 10: Remove the bread from the oven and place on a rack to cool for at least an hour before cutting it.
When you tap the bread it should sound hollow. That’s the sign of good bread! The exterior should be crusty and the interior should be soft! Enjoy with butter or a side to a soup!
