Cooking for ourselves has been fun, right? But for cooking amateurs like me, it has become exhausting to make the same 4-5 recipes all the time. And while we’re always hunting for quick and easy recipes, Vidhi Doshi a.k.a. @ramenhairedgirl is making sure we don’t die of starvation. So, she sent in her recipe for veg Kerala stew and it made me realise how much I miss eating at South Indian joints. Well, not anymore! What You’ll Need
2 tsp coconut oil
3 cloves
1-inch stick cinnamon
10 peppercorns
8 curry leaves
1 large chopped onion
1 tsp ginger garlic paste
1/2 tsp chilli paste
1 cup chopped carrots
1 cup chopped French beans
1 cup chopped potatoes
Salt to taste
350 ml of coconut milk
Pinch of sugar
Ground pepper
Here’s How You Can Put It All Together
Step 1: Heat the oil in a nonstick pan and add the whole spices to it—cloves, peppercorns, and cinnamon. Mix well and let the aroma release. Sauté for 1 minute.
Step 2: Now add the curry leaves and let them crackle.
Step 3: Add the onion, mix well, and sauté for 2 minutes till the onion is translucent. Don’t let it brown.
Step 4: Add the ginger-garlic and chilli paste, mix well, and cook for 2 minutes.
Step 5: Add the veggies at this point. You can even add cauliflower and peas if you want. Mix well and cook for 2-3 minutes.
Step 6: Add salt to taste, 3/4 cup of water, and let it come to a boil. Cover with a lid and let the veggies steam till they are almost cooked.
Step 7: Now add the coconut milk, a pinch of sugar, and mix well. Cover and let it cook till the veggies are completely cooked!
Step 8: Season the curry with a little more ground pepper and serve it with appams or hot steamed rice!
