What’s the one thing you absolutely love to have for breakfast? For me and a lot of people I know, pancakes are the go-to for breakfast. You could top them with honey, maple syrup, fruits, choco chips—literally anything, TBH! And as much as I love devouring them, I know it’s not healthy to consume them on a daily basis (sucks, right?). And so, Vidhi Doshi a.k.a. @ramenhairedgirl came to the rescue and sent in her recipe for moong dal pancakes. Now, I can have pancakes every day without worrying about my sugar intake. What You’ll Need
1/2 cup moong dal
Warm water
1/4 cup rice flour
1/3 cup boiled corn
1 onion, finely chopped
1/2 cup chopped coriander
1 or 2 chilies, finely chopped
Salt to taste
1/2 tsp baking powder
Drinking soda (optional)
Here’s How You Can Put It All Together
Step 1: First, take the moong dal, wash it well and soak it in warm (not hot) water for about an hour. If you’re using regular water instead of warm water, then soak it for about 3 to 4 hours.
Step 2: Once soaked, drain and grind it into a smooth batter along with rice flour and some water.
Step 3: Then transfer the batter to a bowl and add the vegetables. You can also add some other vegetables of your choice. Also, add salt and baking powder, and mix gently.
Step 4: If the batter is too thick, you can make it a bit runny by adding a little water or even 1/4 cup drinking soda so that the pancakes become fluffy. Do not over mix, just enough to blend.
Step 5: Heat a pan with some oil and once hot, pour the batter into it. Once it starts forming bubbles, flip it and cook on the other side. Enjoy with some curd!
