Even if you don’t have any plans to drag yourself in the kitchen, this recipe will defo change it all. What You’ll Need
4 tomatoes
2 tbsp pistachios
1 tbsp olive oil
1/2 onion, sliced
1 tsp finely chopped garlic
1 tsp chilli flakes
1/2 tsp zataar spice
1 cup grated zucchini
1/5 cup finely chopped parsley
Salt and pepper
Here’s How You Can Put It All Together
Step 1: Cut the tomatoes into halves and carefully remove the seeds and flesh. (Instead of discarding the seeds and flesh, you can use it for soups).
Step 2: Rub a little salt on the insides of the tomatoes and keep them upside down.
Step 3: In a pan heat raw unsalted pistachios and dry-roast them.
Step 4: Remove from heat, let them cool and then, roughly chop them.
Step 5: In the same pan, heat a little olive oil, add the thinly sliced onion and cook for about 7-8 minutes till they start to brown.
Step 6: Add the finely chopped garlic, chilli flakes, and zaatar and cook it all for 30 seconds.
Step 7: Now add the grated zucchini, mix well and cook again for about 2-3 minutes.
Step 8: Add 1/2 of the parsley to the mixture along with the pistachios, salt, and pepper. Now mix it all well.
Step 9: Stuff the tomatoes with the mixture and put them on a greased baking tray. Bake them in a preheated oven at 190ºC for about 40-45 minutes, till the top is crunchy and golden.
Step 10: Let them cool for 5 minutes and top with fresh parsley and/or lemon juice and it’s ready!
