What You’ll Need
3 boiled potatoes
2 tsp cornflour
2 tsp rice flour
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp chilli powder
Salt
Pepper
1/2 cup grated processed cheese
1 tbsp schezwan sauce
3/4 cup breadcrumbs
1 1/2 tbsp maida mixed with 1/4 cup water
Here’s How You Can Put It All Together
Step 1: Wipe the potatoes with a paper towel and let them dry out a little. Once cooled a little, peel them and mash them with a fork.
Step 2: Now add the cornflour, rice flour, salt, pepper, onion powder, garlic powder, and red chilli powder and mix well. Remember that the mixture should hold its shape and should not be too soft.
Step 3: In a bowl, mix the cheese and schezwan sauce.
Step 4: Depending on the size of the croquettes, divide the mixture into 5 or 7 portions. Take one portion in your greased palm and flatten it.
Step 5: Place the cheese mix in the centre.
Step 6: Fold it and form a cylindrical shape. Seal properly from all sides so that the cheese doesn’t fall out.
Step 7: Coat the croquettes in the flour-water mixture and then coat it with the bread crumbs.
Step 8: Place them in a greased baking tray and bake in a preheated oven at 180C for 20-25 mins, flipping once in between.
Step 9: Serve hot with more schezwan sauce!
