What if I told you, I had the perfect recipe for you to enjoy the best of both worlds? Something cheesy and so utterly delicious that you’ll keep wanting more. Yet, it has greens in it and will not make you feel guilty for devouring it! This recipe for cheese and greens qutab came in fresh by our favourite girl Vidhi Doshi a.k.a @ramenhairedgirl and we are drooling over it just by looking at the pictures. What You’ll Need
1 1/4 cup chopped spinach
1/2 cup chopped parsley
1/3 cup chopped coriander
1 cup grated cheese
1/2 cup spring onion greens
2 tsp olive oil
1 1/2 finely chopped onion
1 tbsp finely chopped garlic
1 tsp chilli flakes
1 tsp zaatar
2 1/2 cups maida
2 tbsp dahi

Here’s How You Can Put It All Together
Step 1: Combine all the ingredients for the dough in a bowl and add water to it slowly (approx 3/4 cup). Proceed to knead into a semi-soft dough. Keep kneading it for 5-6 minutes more. Then, cover with a damp cloth and refrigerate to rest for 30 mins.

Step 2: Knead the dough once more, make a big log and divide it into 7 equal portions. Keep these portions aside.
Step 3: Now, wash and dry all the chopped greens and place them in a bowl.
Step 4: In a pan, add olive oil, onion, garlic, and salt and sauté for 3-4 minutes till translucent. Then add the chili flakes and zaatar and cook for 1 minute. Switch off the flame.
Step 5: Add the onion mixture to the greens along with the cheese and mix well.

Step 6: Now roll the dough into a thin 8-inch circle using very less flour.
Step 7: Then, spread the filling on one side of the circle, leaving 1 cm edge.
Step 8: Fold over the other side and seal properly.
Step 9: Now, heat a curved pan upside down, put the qutab on it and cook on each side for 2 minutes on medium-high heat.

Step 10: Once cooked, slather it with butter and enjoy it with Greek yogurt.
