What You’ll Need
3 tbsp soy sauce
3/4 tbsp sugar/maple syrup
1 tbsp sesame oil
1 tsp sesame oil
1/2 large onion, sliced
1/2 red capsicum, thinly sliced
1 small carrot, cut into matchsticks
1/3 cup blanched and chopped spinach
1/4 cup sliced spring onion greens
60 grams of glass noodles
Salt to taste
Here’s How You Can Put It All Together
Step 1: Mix the soy sauce, sugar and sesame oil in a small bowl and keep aside.
Step 2: Bring a pot of salted water to boil and boil the noodles in it till cooked al dente (not mushy, just right). Drain the noodles and keep them aside.
Step 3: Heat the remaining sesame oil in a non-stick pan, add the onions, bell pepper, and carrots and sauté for 2-3 minutes till they’re cooked yet crunchy.
Step 4: Then add the spinach, salt, and spring onion greens and mix well. Cook this for 2 more minutes. As the soy sauce and noodles have salt, add on very little salt and taste as you go.
Step 5: Now add the noodles, the prepared sauce and mix well. Toss this on a low flame for 1-2 minutes till everything is mixed well.
