The weather has finally started to get a little better, now that the monsoons have arrived. And what comes with this kind of weather? Major food cravings! TBH, one of my personal favourite monsoon snacks is pakoras. But at the same time, a lot of us are trying to eat healthy too. So how do we make sure we take care of the health part as well as indulge in the cravings? Give the monsoon munchies a healthy twist! Our girl Vidhi Doshi AKA @Ramenhairedgirl shared a recipe for baked vegetable pakoras that are bound to become your next favourite snack. Read on to find out how you can make it at home.
What You’ll Need
1/2 cup sliced onions
1/2 cup chopped spinach
1 potato, cut into thick candlesticks and halved
1/3 cup chopped coriander
1/4 cup finely chopped carrots
1/4 cup finely chopped French beans
1 finely chopped chilli
3/4 cup Besan (+ 2-3tbsp)
4 tbsp rice flour
1 tsp chilli powder
1/4 tsp turmeric powder
1/2 tsp jeera powder
1/4 tsp garam masala
1/2 tsp baking soda
A pinch of hing
Salt to taste
Here’s How You Can Put It All Together
Step 1: Throw in all the vegetables in a big bowl and add salt to it. Now, mix all the vegetables with your hands so that you squeeze out the water.
Step 2: Now add the dry ingredients, all the colours, and the masalas and mix it all well.
Step 3: Once you’re done with the mixing, slowly start adding water little by little till you get a thick batter like consistency. Make sure that the coating is not watery at all. Also, depending on the veggies you might need 2-3 more tbsps of besan.

Step 4: Now, grease the silicon moulds with some oil, and preheat the oven to 200ºC.
Step 5: Add a spoonful of batter into the greased moulds and bake in the oven for 20-25 minutes till it turns golden in colour.
Step 6: Serve hot with chutney and ketchup.
