One of the biggest stress-busters in the world is cooking. Creating a new masterpiece every time you enter the kitchen gives one a certain amount of satisfaction that can’t be explained. Cooking really is an art, isn’t it? We honestly love to cook and hence, we like to share some awesome recipes with you so you can try them out too. Today, Vidhi Doshi a.k.a @Ramenhairedgirl shares a really drool-worthy baked potato with cheese recipe that you’re gonna want to try if you’re a carb freak like us. Scroll down for the entire recipe!
What You’ll Need
3 large potatoes
Olive oil
Salt
1 tbsp butter
1/2 tbsp finely chopped garlic
1/2 cup finely chopped onions
1 tbsp flour (maida)
1 cup milk
1/2 cup broccoli (small florets)
1/4 cup sweet corn
1 cup grated cheese
Salt and pepper
Spring onion greens and Chilli flakes for garnish
Here’s How You Can Put It All Together
Step 1
Prick the potatoes all around with a fork. Place them on a baking tray, drizzle with olive oil and salt and bake in a preheated oven at 200C for 1 hour.
Step 2
Meanwhile, blanch the broccoli and corn for 4 minutes. Drain and keep aside.
Step 3
Heat butter in a pan. Add the garlic and saute for 1 minute. Then add the onions and saute till translucent.
Step 4
Add the flour and whisk continuously for 1 minute till the flour slightly darkens. Now add the milk and whisk again occasionally. Cook this for 2-3 minutes till the milk has thickened. Make sure there are no lumps and that that milk doesn’t burn. Now add 1/2 cup of cheese, salt and pepper.
Step 5
Once melted, add the broccoli and corn and mix well.
Step 6
Once the potatoes are baked, slit them from the top and push ends together to form a sort of pocket.
Step 7
Pour the sauce in this cavity. Top with more grated cheese and bake at 180C for 5-7 minutes or till the cheese melts. Serve garnished with spring onions, chilli flakes and more of the sauce.
