With such erratic and hectic lifestyles, we don’t have an option but to eat food on-the-go most times. Everything almost happens in high-speed throughout the day and we barely get to take a step back and relax. The times that we absolutely have to rush, we get lazy and order in. We recognise this pattern, in fact, we all go through it at some point. And so, we asked Vidhi Doshi a.k.a @RamenHairedGirl to share a quick and easy recipe cold noodle salad recipe that can even substitute as lunch on a hectic day. So, let’s get right to it!
What You’ll Need
A handful of Ramen/soba noodles
2 tbsp sesame oil
1 tsp sesame seeds
1 tbsp finely chopped garlic
1 finely chopped fresh red chilli
1-inch piece of ginger, finely chopped
1/4-1/2 tsp lemon juice, depending on how sour you want it to be.
1/2 cucumber, thinly sliced.
Salt and pepper to taste
Here’s How You Can Put It All Together
Step 1
Boil the noodles in salted water.
Step 2
Till the noodles cook through, toast the sesame seeds lightly in a nonstick pan and keep aside.
Step 3
In the same pan heat the sesame oil. Once heated, add the garlic and saute for 30 seconds till fragrant.
Step 4
Add the chillies and ginger and saute for 30 seconds more.
Step 5
Till this time your noodles should be boiled, so add the noodles in the pan and toss to coat them with Chilli garlic oil. You can add more oil at this stage if you think the noodles will stick. Season with salt and pepper, toss again till mixed. Take it off heat and add the lemon juice.
Also, since this is a cold salad, let the salad cool down completely. So, before serving, take it out from the fridge, add the sesame seeds and cucumber slices, toss and enjoy!
