I honestly love cooking. Especially if the recipes are easy, and the dish is interesting enough to try out. And regional Indian dishes are my fav kind! I’ve made Vidhi Doshi a.k.a @Ramenhairedgirl my bestie so she shares the most amaze recipes with me. Today’s recipe is the classic Gujarati snack—Khaman Dhokla. I’ve always wanted to try this out and with such a simple recipe, why wouldn’t I? So, if you’re a food enthusiast like me, scroll down for the entire recipe.
What You’ll Need
1.5 cups besan
1.5 tbsp rava
1/4 tsp hing
1/2-3/4 tsp citric acid
1/4 tsp turmeric powder
3/4 tsp green chilli paste
1 tsp sugar
1/2-3/4 tsp cooking soda
Salt to taste
2 tbsp oil
1 tsp mustard seeds
5-6 curry leaves
2 green chillies slit
3 tsp sugar
Here’s How You Can Put It All Together
Step 1
Sift the besan and rava together in a large bowl.
Step 2
Add the hing, citric acid, turmeric powder, green chilli paste, salt,1 tsp sugar and approximately 1 cup water and mix well (only in one direction) till no lumps remain. The batter should not be too runny or too thick.
Step 3
Cover it and keep it aside for 20 minutes till the citric acid and sugar completely dissolve.
Step 4
Heat the steamer and grease the plate in which you are going to steam the dhokla. Right before steaming the dhokla, add the cooking soda to the batter and mix it well till the batter becomes nice, frothy and light.
Step 5
Pour the batter on the plate, gently tap to even out the batter and put in the hot steamer in for 16-18 minutes.
Step 6
Remove the dhokla from the steamer and turn it upside down on a plate.
Step 7
Cut into square-shaped pieces.
Step 8
In a small pan, heat 2 tbsps of oil and add 1 tsp mustard seeds, 2 slit green chillies and 5-6 curry leaves.
Step 9
Once they start splattering, add 1/2 a cup or water, 3 tsp of sugar, mix well and let the sugar melt for 2 mins.
Step 10
Pour this immediately over the hot dhoklas and let them stay for 15 minutes. After that, decorate them in a plate and enjoy them best with a cuppa chai!
