Sometimes, it’s tough to stay healthy with all the junk food around. We try to keep up with our diet, but because there’s either some leftover Chinese or pizza in the fridge, we quickly heat it up and indulge. What if we told you, it’s more than simple to whip up a quick salad that’s healthy and takes the least amount of effort and time? With the help of Vidhi Doshi a.k.a @RamenHairedGirl, we’ve got you the complete recipe to fix yourself a corn, sriracha and bell pepper salad at the convenience of your own home. Here it is.
What You’ll Need
1 Tbsp Butter
1/2 Tsp Olive Oil
3/4 Cup Corn Kernels
3/4 Cup Finely Chopped Red Bell Pepper
4 Tsp Sriracha (or any other chilli sauce)
1/2 Tsp Lemon Juice
1/2 Tsp Tomato Ketchup
1/4 Cup Chopped Spring Onion Greens
3 Tbsp Of Finely Chopped Cheese Cubes
Salt To Taste
Here’s How You Can Put It All Together
Step 1
Boil the corn kernels for 4 minutes and drain.
Step 2
Heat the butter and olive oil in a pan, add the corn and saute for 5-6 minutes till they turn slightly brown.
Step 3
Add the bell peppers and saute for 2 minutes till cooked.
Step 4
Add the sriracha, lemon juice, ketchup and salt, mix well and cook for 2 minutes.
Step 5
Add the spring onions, mix well for 30 seconds and turn off the heat.
Step 6
Let it cool a little, then mix in the cheese and serve immediately.
